Description
Roaster description: "Githembe is a washing station or factory (as they are commonly called in Kenya), located near Gatundu, in the extreme north of Kiambu County. Kenya has bimodal rain patterns that bring two wet seasons per year, resulting in two harvest seasons, and boasts red clay loam soil that is rich in nutrients and organic matter. The Githembe factory together with the Kiganjo and Nundu factories form the Thiririka FCS.
Founded in 1995, the coop currently has over 2,400 members. Farmers selectively handpick ripe cherries and deliver them to the factory. Upon arrival, cherries are spread on sorting tables and carefully sorted.
The selected cherries are fully washed using Kenya's traditional double fermentation wet process. Water is pumped from the Thiririka river to reservoir tanks for pulping and recirculation. After pulping, the coffee is dry fermented overnight, before it's washed in grading channels, then soaked for 24-48 hours in clean water, and finally spread out on raised beds for selection and sun drying. Roasted light, the cup is sweet and fruity with balanced acidity. Look for notes of pomelo, baking spice, brown sugar, and apricot."
Personal notes
This one was super tough for me to get good cups out of, but I had a couple of quite good ones when I did more experimentation with recipes.
